Homemade McGriddles

Golden pancakes studded with maple-flavored bits sandwiching fluffy scrambled eggs, crispy bacon, and melted cheese—this is breakfast nostalgia you can actually make at home, and it tastes even better than the original.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • ½ teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 8 slices bacon
  • 4 eggs, for scrambling
  • 4 slices American cheese
  • Butter for the griddle

Method:

  1. Mix flour, sugar, baking powder, and salt. Whisk milk, egg, melted butter, and vanilla together, then combine with dry ingredients until just combined. Fold in maple syrup.
  2. Cook bacon until crispy. Scramble the 4 eggs in a separate pan until fluffy.
  3. Heat a griddle or skillet and butter it generously. Pour small pancake rounds (about 4 inches), cooking until golden on both sides. You need 8 pancakes total.
  4. On 4 pancakes, layer: scrambled eggs, a slice of cheese, 2 strips of bacon. Top with remaining pancakes.
  5. Serve immediately while the cheese is still melty.

Chef's tip: Fold the maple syrup into your batter gently at the very end—it'll dissolve slightly and create those signature sweet pockets throughout each pancake without making them dense.
