Weekend feast
Mississippi Chicken
Tender, fall-apart shredded chicken swimming in a tangy, buttery, briny sauce that tastes like pure comfort—this slow cooker showstopper practically cooks itself while you enjoy your weekend.
Ingredients:
- 4 boneless, skinless chicken breasts (about 2 lbs)
- 4 tablespoons butter
- 1 cup pepperoncini peppers (plus 1/2 cup brine)
- 1/2 cup beef broth
- 1 packet (1 oz) dry ranch seasoning mix
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Method:
- Place chicken breasts in your slow cooker and season with salt and pepper.
- Add butter, pepperoncini peppers, their brine, beef broth, and ranch seasoning mix.
- Cook on low for 6–7 hours or high for 3–4 hours until chicken is impossibly tender.
- Shred the chicken right in the slow cooker, stirring to coat in the sauce.
- Serve over mashed potatoes, rice, or crusty bread to soak up every drop of that magic liquid.
Chef's tip: Don't skip the pepperoncini brine—it's where all the tangy, savory magic lives. That combination of peppers and their liquid is what makes this dish absolutely craveable, so use every bit.
