Chicken and Broccoli Stir-Fry with Ginger and Garlic
This vibrant, restaurant-quality stir-fry comes together in minutes, delivering tender chicken, crisp broccoli, and a glossy sauce that makes weekend cooking feel effortless and exciting.
Ingredients:
- 500g chicken breast, sliced thin
- 500g broccoli florets
- 3 cloves garlic, minced
- 2 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp cornstarch mixed with 2 tbsp water
- 2 tbsp vegetable oil
- 2 green onions, sliced
- Sesame seeds for garnish
- Cooked rice, for serving
Method:
- Heat 1 tbsp oil in a large wok or skillet over high heat. Cook chicken in batches until golden, about 3 minutes per side. Set aside.
- Add remaining oil, then sauté garlic and ginger for 30 seconds until fragrant.
- Add broccoli and stir-fry for 4–5 minutes until tender-crisp.
- Return chicken to the pan. Whisk together soy sauce, oyster sauce, sesame oil, and cornstarch slurry, then pour over. Toss for 1–2 minutes until sauce coats everything.
- Top with green onions and sesame seeds. Serve over steaming rice.
Chef's tip: Slice your chicken against the grain and have all ingredients prepped before you start cooking—high heat moves fast, and you'll want everything ready to go for that perfect tender texture.
