Passion Fruit Chia Pudding
A silky, protein-packed pudding that tastes like dessert but feels like self-care—the secret ingredient is silken tofu, which blends into pure creaminess without any detectable taste.
Ingredients:
- 200g silken tofu
- 150g vanilla yogurt
- 60ml passion fruit pulp (about 3–4 fruits, or frozen purée)
- 3 tablespoons sweetened condensed milk
- 4 tablespoons chia seeds
- 1 teaspoon vanilla extract
- Pinch of salt
- Fresh passion fruit or berries to serve
Method:
- Add tofu, yogurt, passion fruit pulp, condensed milk, and vanilla to a blender. Blitz until completely smooth and creamy.
- Pour the mixture into a bowl and fold in the chia seeds gently.
- Divide between serving glasses or bowls.
- Refrigerate for at least 15 minutes—or make it ahead and chill overnight for deeper flavour.
- Top with fresh passion fruit seeds, berries, or a drizzle of honey before serving.
Chef's tip: If fresh passion fruit is hard to find, frozen passion fruit purée works brilliantly and actually makes this even quicker. The pudding thickens beautifully overnight, so this is perfect for prepping ahead.
