Passion Fruit Chia Pudding

This elegant, silky pudding tastes like a fancy French dessert but comes together in minutes—tropical passion fruit meets creamy tofu for a luxurious treat that feels indulgent without the fuss.

Ingredients:

  • 200g silken tofu
  • 150ml vanilla yogurt
  • 100ml passion fruit pulp (fresh or frozen)
  • 60ml sweetened condensed milk
  • 60ml chia seeds
  • Pinch of salt

Method:

  1. Blend the silken tofu, vanilla yogurt, passion fruit pulp, and sweetened condensed milk until completely smooth and creamy.
  2. Pour the mixture into a bowl and gently fold in the chia seeds until evenly distributed.
  3. Divide between serving glasses or bowls.
  4. Refrigerate for at least 30 minutes (or up to 2 hours) until the chia seeds absorb the liquid and create a pudding-like texture.
  5. Serve chilled, optionally topped with fresh passion fruit seeds or a drizzle of honey.
