How to Make a French Omelette, the Right Way (in Just 5 Minutes!)

A French omelette is breakfast perfection: delicate, custardy, and elegant enough to make you feel like you're sitting in a Parisian café, all before your coffee's gone cold.

Ingredients:

  • 3 eggs
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1 tablespoon fresh herbs (chives, parsley, or tarragon), optional
  • 1–2 tablespoons filling of choice (cheese, ham, mushrooms), optional

Method:

  1. Crack eggs into a bowl, add a pinch of salt and pepper, and whisk vigorously for 30 seconds until pale and frothy.
  2. Heat butter in an 8-inch non-stick pan over medium heat until foaming but not browning.
  3. Pour in eggs and let them sit for 5 seconds, then gently push from the edges to the center with a spatula, tilting the pan so uncooked egg flows to the edges.
  4. When the top is still slightly creamy (not fully set), add filling if using, then fold the omelette in half.
  5. Slide onto a warm plate and garnish with fresh herbs.

Chef's tip: The secret is constant, gentle motion—never let the eggs sit still, or you'll end up with a tough American-style omelette instead of that signature silky, slightly runny center.
