Gnocchi with Sausage and Fall Vegetables

This is pure weeknight magic: pillowy gnocchi tossed with smoky sausage and caramelized vegetables all on one sheet pan, ready in under 30 minutes and requiring almost zero cleanup.

Ingredients:

  • 1 lb gnocchi (fresh or frozen)
  • 4 Italian sausages, sliced into bite-sized pieces
  • 2 cups Brussels sprouts, halved
  • 1 cup diced butternut squash
  • 1 red onion, cut into wedges
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt, pepper, and Italian seasoning to taste
  • ½ cup grated Parmesan cheese

Method:
