Gnocchi with Sausage and Fall Vegetables
This is pure weeknight magic: pillowy gnocchi tossed with smoky sausage and caramelized vegetables all on one sheet pan, ready in under 30 minutes and requiring almost zero cleanup.
Ingredients:
- 1 lb gnocchi (fresh or frozen)
- 4 Italian sausages, sliced into bite-sized pieces
- 2 cups Brussels sprouts, halved
- 1 cup diced butternut squash
- 1 red onion, cut into wedges
- 3 tbsp olive oil
- 2 cloves garlic, minced
- Salt, pepper, and Italian seasoning to taste
- ½ cup grated Parmesan cheese
Method:
- Preheat your oven to 425°F.
- Toss gnocchi, sausage, vegetables, olive oil, and garlic on a large sheet pan. Season generously with salt, pepper, and Italian seasoning.
