Crispy Indian Potato and Corn Fritters

Golden, crunchy fritters loaded with potato, corn, and aromatic spices—these are the ultimate Indian snack that disappears in minutes. They're crispy outside, tender within, and utterly addictive alongside chai or as a side to any meal.

Ingredients:

  • 2 medium potatoes, finely grated
  • 1 cup fresh or frozen corn
  • 1 small onion, finely chopped
  • 1–2 green chilies, minced
  • ½ cup fresh coriander, chopped
  • ¾ cup chickpea flour (besan)
  • ¼ tsp turmeric
  • ½ tsp cumin seeds
  • Salt and black pepper to taste
  • Oil for shallow frying

Method:

  1. Squeeze excess moisture from the grated potatoes using a clean cloth—this is key for crispiness.
  2. In a bowl, combine potatoes, corn, onion, chilies, and coriander.
  3. Add besan, turmeric, cumin seeds, salt, and pepper. Mix until a thick, cohesive batter forms.
  4. Heat oil in a shallow pan over medium-high heat.
  5. Drop spoonfuls of batter into the hot oil and gently flatten with the back of the spoon.
  6. Fry 2–3 minutes per side until deep golden and crispy.
  7. Drain on paper towels and serve hot with mint chutney or tamarind sauce.

Chef's tip: Don't skip squeezing the potatoes dry—moisture is the enemy of crispiness. A quick squeeze in a clean kitchen towel makes all the difference between soggy and spectacular.
