Masala Dosa

A South Indian breakfast legend—crispy, paper-thin rice crepes wrapped around a golden, spiced potato filling with coconut chutney and tangy sambar on the side. It's the kind of dish that feels restaurant-fancy but absolutely doable at home.

Ingredients:

  • 1 cup rice
  • ⅓ cup urad dal (split black lentils)
  • ½ teaspoon fenugreek seeds
  • Salt to taste
  • 4 medium potatoes, boiled and diced
  • 2 onions, finely sliced
  • 3 green chilies, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • Curry leaves, a handful
  • Turmeric, ½ teaspoon
  • Oil or ghee for cooking

Method:

  1. Soak rice and urad dal separately for 4–6 hours. Grind each into silky batters, then combine with fenugreek seeds and salt. Let ferment overnight at room temperature.
  2. For the filling: heat oil, temper mustard and cumin seeds, add onions until golden. Toss in chilies, ginger, curry leaves, and turmeric. Add potatoes, mix gently, season.
  3. Heat a non-stick griddle or tawa over medium-high heat. Pour batter in a thin spiral, working from centre outward. Drizzle oil around edges.
  4. Cook until the base turns golden and crispy (2–3 minutes), then flip. Cook the other side until light brown.
  5. Spoon filling down the centre, fold, and slide onto a plate. Serve with coconut chutney and sambar.

Chef's tip: Make your batter the night before—proper fermentation is the secret to dosas that are genuinely crispy outside yet soft inside, not rubbery.
