Panisses (Chickpea Fries)

Golden, crispy chickpea fries with creamy centers—this French-Provençal classic delivers all the indulgence of fries while packing serious protein and nutrition into every bite.

Ingredients:

  • 1 cup chickpea flour
  • 3 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 2 tablespoons olive oil, plus more for frying
  • Fresh rosemary or thyme (optional)

Method:

  1. Whisk chickpea flour with broth, salt, garlic powder, and paprika until completely smooth with no lumps.
  2. Pour into a saucepan and stir constantly over medium heat for 8–10 minutes until the mixture thickens into polenta-like consistency and pulls away from the sides.
  3. Stir in 2 tablespoons olive oil and any herbs you're using. Pour onto an oiled baking tray, smooth into a ½-inch layer, and cool completely (30 minutes or chill overnight).
  4. Cut into fry-shaped sticks. Heat oil in a deep pan to 350°F and fry in batches until golden and crispy, about 3 minutes per side.
  5. Drain on paper towels, season with fleur de sel, and serve immediately with your favorite dipping sauce.
