Indian Spiced Egg Curry
Silky eggs nestled in a fragrant tomato-based sauce spiced with warming garam masala and fresh ginger—this is comfort food that feels like a proper dinner, yet comes together in under 30 minutes.
Ingredients:
- 8 eggs
- 2 tablespoons oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon garam masala
- ½ teaspoon turmeric
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper
- ½ cup coconut milk (optional, for richness)
- Fresh cilantro for garnish
Method:
- Hard-boil the eggs for 10 minutes, then cool and peel them.
- Heat oil in a large skillet over medium heat. Sauté the onion until golden, about 5 minutes.
- Add garlic and ginger, stir for 1 minute until fragrant.
- Add crushed tomatoes, garam masala, turmeric, cumin, salt, and cayenne. Simmer for 8 minutes.
- Stir in coconut milk if using. Gently nestle the boiled eggs into the sauce.
- Simmer for 3–4 minutes, then garnish with cilantro and serve with rice or naan.
