Coconut Curry Beans and Greens
Creamy, warming, and ready in half an hour—this is Indian-inspired comfort that actually feels light. Coconut milk embraces white beans and leafy greens in a fragrant curry sauce, making it perfect as a side dish that could easily steal the show, or as a snack-sized bowl when you need something satisfying between meals.
Ingredients:
- 2 tablespoons oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 can (14 oz) coconut milk
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups mixed greens (spinach, kale, or chard)
- 1 cup diced tomatoes (fresh or canned)
- Salt and pepper to taste
- Fresh cilantro (optional)
Method:
- Heat oil in a large pan over medium heat. Sauté onion until soft, about 5 minutes.
- Add garlic, curry powder, and cumin. Stir constantly for 1 minute until fragrant.
- Pour in coconut milk and tomatoes, scraping up any browned bits. Simmer for 5 minutes.
- Add beans and stir well. Cook for another 5 minutes until heated through.
- Fold in greens gradually until wilted, about 3–5 minutes. Taste and season with salt and pepper.
- Serve warm, garnished with cilantro if desired.
Chef's tip: Don't skip toasting your spices in the hot oil for that first minute—it wakes them up and deepens the entire dish's flavor dramatically.
