Zuppa Toscana
This creamy, soul-warming Tuscan soup is comfort in a bowl—Italian sausage, tender potatoes, and kale simmered in a rich broth that tastes like you've been tending it all day, even though it comes together in under an hour. It's the kind of dish that makes a weekend feast feel both effortless and indulgent.
Ingredients:
- 1 lb Italian sausage, removed from casings
- 4 medium potatoes, diced
- 6 cups chicken broth
- 4 cloves garlic, minced
- 4 cups chopped kale
- 1 cup heavy cream
- 1 onion, diced
- Salt, pepper, and red pepper flakes to taste
Method:
- Brown the sausage in a large pot over medium-high heat, breaking it into small pieces as it cooks (about 5 minutes). Drain excess fat, leaving about 2 tablespoons.
- Add diced onion and garlic; sauté until softened, about 3 minutes.
- Stir in potatoes and chicken broth. Bring to a boil, then simmer for 15–20 minutes until potatoes are tender.
- Add kale and simmer for 5 more minutes until wilted.
- Pour in cream, stir gently, and season with salt, pepper, and red pepper flakes. Simmer another 2–3 minutes.
- Taste and adjust seasoning. Serve hot with crusty bread.
