Easy Eggplant Bolognese

Forget everything you think you know about bolognese—this vibrant, one-pot version swaps heavy meat for silky roasted eggplant that melts into a rich tomato sauce, creating something that's light yet utterly satisfying and ready in under an hour.

Ingredients:

  • 1 large eggplant, diced into small cubes
  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 4 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • ½ cup red wine (optional, water works fine)
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt, pepper, and pinch of sugar to taste
  • Fresh basil and Parmesan for serving
  • Pasta of your choice

Method:

  1. Heat oil in a large pot over medium-high heat. Add diced eggplant and cook 5–7 minutes until it starts to soften and brown, stirring occasionally. Set aside.
  2. In the same pot, sauté onion, carrot, and celery until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Stir in tomato paste and cook 2 minutes. Pour in crushed tomatoes and wine, scraping up any browned bits.
  4. Return eggplant to the pot. Add oregano, balsamic vinegar, salt, and pepper. Bring to a simmer.
  5. Simmer gently for 20–25 minutes, stirring occasionally, until thick and flavors meld. Taste and adjust seasoning.
  6. Meanwhile, cook pasta according to package directions. Drain and toss with sauce.
  7. Serve topped with fresh basil and grated Parmesan.
