Zabaglione
This silky, cloud-like Italian custard is whisked over gentle heat into pure magic—rich egg yolks, sweet Marsala wine, and a whisper of sugar come together in minutes to create an elegant dessert that feels impossibly luxurious yet needs just four ingredients.
Ingredients:
- 5 egg yolks
- 75g caster sugar
- 120ml Marsala wine (or sweet sherry)
- Pinch of salt
Method:
- Fill a large bowl with ice water and set aside. Create a double boiler by placing a heatproof bowl over a pot of gently simmering water (the bowl shouldn't touch the water).
- Add egg yolks, sugar, and salt to the bowl. Whisk constantly with an electric mixer or by hand for 1–2 minutes until pale and thick.
- Pour in the Marsala slowly while whisking continuously, keeping the mixture over the gentle heat for 8–10 minutes total. You're looking for it to triple in volume and reach 65°C (a pale, fluffy mousse).
- Once thick and ribbony, remove from heat and whisk for another minute or two.
- Serve immediately in chilled glasses, or chill and serve cold. Pair with fresh berries, biscuits, or sponge fingers.
Chef's tip: Don't skip the double boiler—direct heat will scramble your eggs into sweet scrambled egg soup. Low and slow is the only way; the whisking does the heavy lifting.
