Zabaglione

This silky, cloud-like Italian custard is whisked over gentle heat into pure magic—rich egg yolks, sweet Marsala wine, and a whisper of sugar come together in minutes to create an elegant dessert that feels impossibly luxurious yet needs just four ingredients.

Ingredients:

  • 5 egg yolks
  • 75g caster sugar
  • 120ml Marsala wine (or sweet sherry)
  • Pinch of salt

Method:

  1. Fill a large bowl with ice water and set aside. Create a double boiler by placing a heatproof bowl over a pot of gently simmering water (the bowl shouldn't touch the water).
  2. Add egg yolks, sugar, and salt to the bowl. Whisk constantly with an electric mixer or by hand for 1–2 minutes until pale and thick.
  3. Pour in the Marsala slowly while whisking continuously, keeping the mixture over the gentle heat for 8–10 minutes total. You're looking for it to triple in volume and reach 65°C (a pale, fluffy mousse).
  4. Once thick and ribbony, remove from heat and whisk for another minute or two.
  5. Serve immediately in chilled glasses, or chill and serve cold. Pair with fresh berries, biscuits, or sponge fingers.

Chef's tip: Don't skip the double boiler—direct heat will scramble your eggs into sweet scrambled egg soup. Low and slow is the only way; the whisking does the heavy lifting.
