Mediterranean Cucumber Salad

This is the kind of side that steals the show—crisp, bright, and so refreshing you'll find yourself sneaking bites straight from the bowl. Fresh dill and mint meet salty feta and garlicky lemon in a combination that tastes like a Mediterranean holiday, yet takes barely any time to pull together.

Ingredients:

  • 2 large cucumbers, sliced into half-moons
  • 1 red onion, thinly sliced
  • 200g crumbled feta cheese
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Method:

  1. Place cucumber slices and red onion in a large bowl.
  2. Whisk together garlic, lemon juice, and olive oil in a small bowl. Season with salt and pepper.
  3. Pour dressing over cucumbers and toss gently to combine.
  4. Let sit for 5–10 minutes so flavours meld together.
  5. Top with fresh dill, mint, and crumbled feta just before serving.
