Panisses (Chickpea Fries)
Crispy golden sticks with creamy, pillowy centers—panisses are the sophisticated Mediterranean snack that'll make you forget regular fries exist. These Provençal chickpea fries are simple, satisfying, and genuinely better for you, with nutty chickpea flavor and a texture that's impossibly good.
Ingredients:
- 1 cup chickpea flour
- 3 cups vegetable or chicken stock
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- 2 tablespoons olive oil (plus more for frying)
- Oil for deep frying
Method:
- Bring stock to a boil in a saucepan. Whisk in chickpea flour slowly to avoid lumps, stirring constantly until thickened (about 5 minutes).
- Season with salt, pepper, and garlic powder. Stir in 2 tablespoons olive oil.
- Pour the mixture onto a parchment-lined baking sheet in a ½-inch layer. Cool to room temperature, then refrigerate for 2 hours until firm.
- Cut into fries (roughly 3 inches long). Heat oil to 350°F and fry in batches until golden and crispy, about 3–4 minutes.
- Drain on paper towels and serve hot with tzatziki, aioli, or your favorite dipping sauce.
