Slow Cooker Chicken Cacciatore

This is Italian comfort at its finest—tender chicken thighs braised low and slow with peppers, onions, and a deeply savory tomato sauce that fills your kitchen with pure warmth. It's the kind of dish that makes a weekend feast feel effortless.

Ingredients:

  • 8 chicken thighs, skin-on
  • 2 bell peppers (red and yellow), sliced
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup chicken broth
  • ½ cup dry white wine or extra broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil and parsley for serving
  • Pasta, polenta, or rice to serve

Method:

  1. Season chicken thighs generously with salt and pepper.
  2. Layer onions, peppers, and garlic in your slow cooker.
  3. Nestle chicken thighs on top of the vegetables.
  4. Whisk together tomatoes, broth, wine, tomato paste, oregano, and red pepper flakes. Pour over chicken.
  5. Cook on low for 6–7 hours, or high for 3–4 hours, until chicken is fall-apart tender.
  6. Serve over pasta, polenta, or rice, garnished with fresh herbs.
