Slow Cooker Chicken Cacciatore
This is Italian comfort at its finest—tender chicken thighs braised low and slow with peppers, onions, and a deeply savory tomato sauce that fills your kitchen with pure warmth. It's the kind of dish that makes a weekend feast feel effortless.
Ingredients:
- 8 chicken thighs, skin-on
- 2 bell peppers (red and yellow), sliced
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 cup chicken broth
- ½ cup dry white wine or extra broth
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil and parsley for serving
- Pasta, polenta, or rice to serve
Method:
- Season chicken thighs generously with salt and pepper.
- Layer onions, peppers, and garlic in your slow cooker.
- Nestle chicken thighs on top of the vegetables.
- Whisk together tomatoes, broth, wine, tomato paste, oregano, and red pepper flakes. Pour over chicken.
- Cook on low for 6–7 hours, or high for 3–4 hours, until chicken is fall-apart tender.
- Serve over pasta, polenta, or rice, garnished with fresh herbs.
Chef's tip: Brown the chicken thighs in a hot skillet for 3–4 minutes skin-side down before adding to the slow cooker—this creates a golden crust and deeper, richer flavour that elevates the entire dish.
