Zuppa Toscana
This creamy, soul-warming Italian soup is pure comfort in a bowl—sausage, potatoes, and kale come together in a lightly brothy base that feels restaurant-quality but takes barely 30 minutes, making it the ultimate weeknight winner.
Ingredients:
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 4 cloves garlic, minced
- 1 lb potatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups kale, chopped
- Salt and pepper to taste
- Red pepper flakes (optional)
- Olive oil
Method:
- Heat olive oil in a large pot over medium-high heat. Brown the sausage, breaking it apart as it cooks, about 5 minutes. Set aside.
- In the same pot, sauté onion until soft, about 3 minutes. Add garlic and cook 1 minute more.
- Add diced potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender, about 15 minutes.
- Stir in the cooked sausage and heavy cream. Simmer gently for 5 minutes.
- Stir in chopped kale and cook just until wilted, 2–3 minutes. Season with salt, pepper, and red pepper flakes to taste.
- Ladle into bowls and serve immediately.
Chef's tip: Don't skip browning the sausage properly—those caramelized bits are where all the flavor lives, and they'll cling to the bottom of your pot creating a golden foundation for everything else.
