Salted Maple Pecan Focaccia

This is where focaccia meets sticky buns—a Mediterranean-inspired flatbread transformed into a showstopping sweet treat with the richness of maple, toasted pecans, and a whisper of sea salt that brings everything into perfect balance.

Ingredients:

  • 500g bread flour
  • 7g instant yeast
  • 300ml warm water
  • 60ml olive oil, plus more for drizzling
  • 10g salt
  • 100g butter, softened
  • 120g brown sugar
  • 120ml maple syrup
  • 150g pecans, toasted and chopped
  • Fleur de sel for topping

Method:

  1. Mix flour, yeast, water, olive oil, and salt. Knead until smooth, then let rise 1 hour until doubled.
  2. Toast pecans in a skillet, then stir in butter, brown sugar, and maple syrup until caramelized. Cool slightly.
  3. Press dough into an oiled baking pan. Spread pecan mixture evenly over the surface.
  4. Let rise 30 minutes until puffy. Bake at 190°C for 25–30 minutes until golden.
  5. Drizzle with extra maple syrup and sprinkle with fleur de sel while warm.
