Passion Fruit Chia Pudding
A silky, luxurious pudding that tastes like a tropical escape—creamy passion fruit swirled through with a gentle tofu richness, ready in minutes and naturally high in protein.
Ingredients:
- 1 cup silken tofu, drained
- ¾ cup vanilla yogurt
- ½ cup passion fruit pulp (fresh or frozen)
- 3 tablespoons sweetened condensed milk
- ¼ cup chia seeds
- Honey or agave to taste
- Pinch of sea salt
Method:
- Blend silken tofu, vanilla yogurt, passion fruit pulp, and condensed milk until completely smooth and creamy.
- Gently fold in the chia seeds until evenly distributed.
- Taste and sweeten with honey if needed; add a pinch of salt to brighten flavours.
- Divide into serving glasses or bowls.
- Chill for at least 15 minutes—or make ahead and refrigerate overnight for even thicker pudding.
- Stir gently before serving and top with fresh passion fruit, toasted coconut, or granola if desired.
