Passion Fruit Chia Pudding

A silky, luxurious pudding that tastes like a tropical escape—creamy passion fruit swirled through with a gentle tofu richness, ready in minutes and naturally high in protein.

Ingredients:

  • 1 cup silken tofu, drained
  • ¾ cup vanilla yogurt
  • ½ cup passion fruit pulp (fresh or frozen)
  • 3 tablespoons sweetened condensed milk
  • ¼ cup chia seeds
  • Honey or agave to taste
  • Pinch of sea salt

Method:

  1. Blend silken tofu, vanilla yogurt, passion fruit pulp, and condensed milk until completely smooth and creamy.
  2. Gently fold in the chia seeds until evenly distributed.
  3. Taste and sweeten with honey if needed; add a pinch of salt to brighten flavours.
  4. Divide into serving glasses or bowls.
  5. Chill for at least 15 minutes—or make ahead and refrigerate overnight for even thicker pudding.
  6. Stir gently before serving and top with fresh passion fruit, toasted coconut, or granola if desired.
