Easy Jalapeño Corn Fritters (Vegan)
Crispy-golden exterior, tender inside, and packed with fresh corn and jalapeño heat—these fritters are the kind of snack that disappears in minutes and leaves everyone asking for the recipe.
Ingredients:
- 2 cups corn kernels (fresh or frozen)
- 1 cup all-purpose flour
- ½ cup unsweetened plant milk
- 2–3 jalapeños, finely diced
- ¼ cup fresh cilantro, chopped
- 1 teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Oil for frying
Method:
- Combine flour, plant milk, cumin, salt, and pepper in a bowl until you have a thick batter.
- Fold in corn, jalapeños, and cilantro until evenly distributed.
- Heat ¼ inch of oil in a shallow skillet over medium-high heat until shimmering.
- Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon.
- Fry 2–3 minutes per side until golden and crispy.
- Drain on paper towels and serve warm with lime crema or your favourite sauce.
