Easy Jalapeño Corn Fritters (Vegan)

Crispy-golden exterior, tender inside, and packed with fresh corn and jalapeño heat—these fritters are the kind of snack that disappears in minutes and leaves everyone asking for the recipe.

Ingredients:

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup all-purpose flour
  • ½ cup unsweetened plant milk
  • 2–3 jalapeños, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Oil for frying

Method:

  1. Combine flour, plant milk, cumin, salt, and pepper in a bowl until you have a thick batter.
  2. Fold in corn, jalapeños, and cilantro until evenly distributed.
  3. Heat ¼ inch of oil in a shallow skillet over medium-high heat until shimmering.
  4. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon.
  5. Fry 2–3 minutes per side until golden and crispy.
  6. Drain on paper towels and serve warm with lime crema or your favourite sauce.
