Weekend feast
Turkey and Black Bean Enchiladas
Tender tortillas wrapped around seasoned ground turkey and black beans, then smothered in homemade enchilada sauce and melted cheese — this is the kind of weekend showstopper that feeds a crowd without keeping you stuck in the kitchen all day.
Ingredients:
- 1 lb ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tsp cumin
- 1 tsp chili powder
- 2 cups enchilada sauce (red or green)
- 8 corn or flour tortillas
- 1½ cups shredded Monterey Jack or cheddar cheese
- Salt and pepper to taste
- Fresh cilantro for garnish
Method:
- Preheat oven to 350°F and lightly grease a 9×13 baking dish.
- Brown the turkey with onion and garlic over medium-high heat, breaking it apart as it cooks (about 5 minutes). Stir in cumin and chili powder.
- Mix in black beans and season with salt and pepper. Remove from heat.
- Spread a thin layer of enchilada sauce on the baking dish bottom.
- Warm tortillas, then fill each with turkey-bean mixture, roll tightly, and arrange seam-side down in the dish.
- Pour remaining sauce over enchiladas and top with cheese.
- Bake 25–30 minutes until bubbly and golden. Garnish with cilantro and serve.
Chef's tip: Warm your tortillas in a dry skillet before filling — they'll be pliable and won't tear, making rolling effortless and your dish look restaurant-worthy.
