Easy Jalapeño Corn Fritters

Golden, crispy-outside corn fritters spiked with fresh jalapeño heat—these are the kind of snack that disappears faster than you can make them, and they're naturally vegan so everyone at the table can enjoy them.

Ingredients:

  • 1 cup fresh or frozen corn
  • ¾ cup all-purpose flour
  • ⅓ cup unsweetened plant-based milk
  • 2 tablespoons ground flaxseed mixed with 5 tablespoons water (flax egg)
  • 2 jalapeños, minced
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Oil for frying

Method:

  1. Let your flax egg sit for 5 minutes to thicken.
  2. Combine flour, cumin, paprika, salt, and pepper in a bowl.
  3. Stir in the flax egg, plant milk, corn, and jalapeños until just combined—don't overmix.
  4. Heat ¼ inch of oil in a skillet over medium-high heat until shimmering.
  5. Drop spoonfuls of batter into the oil and flatten gently. Fry 2–3 minutes per side until golden.
  6. Transfer to a paper towel-lined plate.

Chef's tip: If your batter feels too wet, let it rest for a few minutes—the corn will release liquid, and you'll get crispier fritters without adding more flour.
