Easy Jalapeño Corn Fritters

Golden, crispy-outside corn fritters with a tender bite and just the right kick of heat—these are the kind of weeknight dinner that feels like you're treating yourself, not just feeding yourself.

Ingredients:

  • 1 cup corn (fresh or frozen)
  • 1 cup all-purpose flour
  • ½ cup plant-based milk (or regular milk)
  • 2 jalapeños, minced
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Oil for frying
  • Lime crema or sour cream for serving

Method:

  1. Whisk together flour, milk, cumin, garlic powder, salt, and pepper until you have a thick batter.
  2. Fold in corn and jalapeños gently—don't overmix.
  3. Heat a skillet over medium-high heat with about ¼ inch of oil.
  4. Drop spoonfuls of batter into the hot oil and flatten slightly with the back of the spoon.
  5. Fry 2–3 minutes per side until golden and crispy.
  6. Drain on paper towels and serve warm with lime crema, salsa, or your favorite dip.
