Easy Jalapeño Corn Fritters

Crispy, golden fritters packed with sweet corn and bright jalapeño heat—these are the kind of snack that disappears in minutes and leaves everyone asking for the recipe.

Ingredients:

  • 1 cup fresh or frozen corn
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 2 jalapeños, finely diced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup unsweetened plant-based milk
  • 2 tablespoons olive oil, plus more for frying
  • Fresh cilantro for serving

Method:

  1. Whisk together flour, cornstarch, cumin, paprika, salt, and pepper in a bowl.
  2. In another bowl, combine milk and olive oil, then fold into dry ingredients until just mixed.
  3. Stir in corn and jalapeños gently—don't overwork the batter.
  4. Heat a shallow pan with oil over medium-high heat until shimmering.
  5. Drop spoonfuls of batter into the pan, pressing gently, and fry for 2–3 minutes per side until golden and crispy.
  6. Drain on paper towels and serve warm with cilantro and a squeeze of lime.

Chef's tip: Don't skip the cornstarch—it's the secret to that impossibly crispy exterior while keeping the inside tender. The fritters also taste incredible at room temperature, making them perfect for packing into lunch boxes or serving at gatherings.
