Sheet Pan Doner Kebab
This is the weeknight shortcut that tastes like you've been standing over a spit for hours—crispy, seasoned beef that comes together in one pan while your oven does the work, then served gyro-style with all the fresh, cooling toppings that make this dish sing.
Ingredients:
- 1.5 lbs ground beef
- 2 tbsp olive oil
- 2 tsp paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- ½ tsp cayenne pepper
- Salt and pepper to taste
- Pita bread
- Tzatziki sauce
- Fresh tomatoes, cucumbers, red onion, and lettuce
Method:
- Preheat oven to 400°F and line a sheet pan with foil.
- Mix ground beef with olive oil and all spices until just combined.
- Form the mixture into a tight loaf down the centre of the sheet pan, pressing it firmly.
- Bake for 20–25 minutes until the edges are crispy and the centre is cooked through.
- Remove from oven and break the meat into thin, crispy shards with two forks.
- Return to oven for 5 minutes to re-crisp if needed.
- Warm pita bread, then fill with meat, tzatziki, and fresh vegetables.
Chef's tip: Don't skip pressing the meat firmly into the pan—that's what creates those irresistible crispy edges that make this feel restaurant-quality.
