Sheet Pan Doner Kebab

This is the weeknight shortcut that tastes like you've been standing over a spit for hours—crispy, seasoned beef that comes together in one pan while your oven does the work, then served gyro-style with all the fresh, cooling toppings that make this dish sing.

Ingredients:

  • 1.5 lbs ground beef
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper
  • Salt and pepper to taste
  • Pita bread
  • Tzatziki sauce
  • Fresh tomatoes, cucumbers, red onion, and lettuce

Method:

  1. Preheat oven to 400°F and line a sheet pan with foil.
  2. Mix ground beef with olive oil and all spices until just combined.
  3. Form the mixture into a tight loaf down the centre of the sheet pan, pressing it firmly.
  4. Bake for 20–25 minutes until the edges are crispy and the centre is cooked through.
  5. Remove from oven and break the meat into thin, crispy shards with two forks.
  6. Return to oven for 5 minutes to re-crisp if needed.
  7. Warm pita bread, then fill with meat, tzatziki, and fresh vegetables.
