Triple Chocolate Cheesecake
This is the ultimate chocolate lover's dream — a show-stopping dessert where chocolate appears in every single layer, building from a crispy chocolate graham cracker crust through a silky, cloud-like filling to a glossy ganache crown.
Ingredients:
- 200g chocolate graham crackers, crushed
- 100g melted butter
- 900g cream cheese, softened
- 200g dark chocolate, melted and cooled
- 150g sugar
- 3 large eggs
- 1 tsp vanilla extract
- 200ml sour cream
- 150g dark chocolate for ganache
- 120ml heavy cream
Method:
- Preheat oven to 160°C. Mix crushed crackers with melted butter, press firmly into a 23cm springform pan, and bake for 8 minutes.
- Beat softened cream cheese until smooth, then add melted chocolate, sugar, and vanilla, mixing until combined.
- Add eggs one at a time, beating gently after each. Fold in sour cream carefully.
- Pour filling over crust and smooth the top. Bake for 45–50 minutes until the centre is just set but still slightly jiggly.
- Cool completely in the oven with the door cracked open for 1 hour, then refrigerate for at least 6 hours.
- For ganache, heat cream until steaming, pour over chopped chocolate, let sit 2 minutes, then stir until glossy. Cool slightly, then pour over cheesecake.

Chef's tip: Don't skip the slow cooling — cracking happens when cheesecake cools too quickly, so that cracked-open oven door is your secret weapon for a flawless finish.
