Bacon-Wrapped Pork Tenderloin with Delicata Squash and Caramelized Pears
This is the kind of showstopper that makes a weekend feast feel effortless—juicy pork wrapped in crispy bacon, roasted alongside sweet squash and caramelized pears all on one sheet pan, with barely any cleanup required.
Ingredients:
- 1 pork tenderloin (about 1.5 lbs)
- 8 slices bacon
- 1 delicata squash, halved, seeded, and sliced into crescents
- 2 firm pears, cored and halved
- 2 tablespoons whole-grain mustard
- 2 tablespoons pure maple syrup
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
Method:
- Preheat oven to 400°F. Pat the pork dry and season generously with salt and pepper.
- Wrap bacon slices tightly around the pork tenderloin, securing with toothpicks if needed.
- On a large sheet pan, toss squash with 1 tablespoon oil, salt, and pepper. Arrange around the pan edges.
- Place bacon-wrapped pork in the center of the pan. Roast for 20 minutes.
- While pork roasts, whisk together mustard and maple syrup. Toss pears with remaining oil and brush with mustard mixture.
- Add pears to the pan and roast another 15–20 minutes until pork reaches 145°F internally and bacon crisps up.
- Let rest 5 minutes, then slice and serve with the roasted vegetables.
Chef's tip: Let your pork tenderloin sit at room temperature for 20 minutes before roasting—it'll cook more evenly and stay incredibly juicy inside while the bacon gets perfectly crisp.
