Weeknight dinner
One Pot Broccoli Chicken Mac and Cheese
Forget everything you know about mac and cheese being a side dish—this one-pot wonder pulls it all together with chicken and broccoli into a complete, creamy dinner that hits the table in under 35 minutes and leaves you with barely a dish to wash.
Ingredients:
- 1 lb boneless, skinless chicken breasts, cubed
- 12 oz pasta (elbow or penne)
- 3 cups broccoli florets
- 4 cups chicken stock
- 2 cups sharp cheddar cheese, shredded
- ½ cup milk
- 3 tablespoons butter
- 2 tablespoons cornstarch
- Salt, pepper, and garlic powder to taste
Method:
- Melt butter in a large pot over medium-high heat. Season chicken with salt and pepper, then brown it for 3-4 minutes until just colored (it won't be fully cooked).
- Add stock and bring to a boil. Stir in pasta and return to a boil, then simmer for 8 minutes, stirring occasionally.
- Add broccoli and cook another 4 minutes until pasta is tender and chicken is cooked through.
- Whisk cornstarch with milk until smooth. Reduce heat to low, pour in the mixture, and stir constantly for 1-2 minutes.
- Remove from heat and stir in cheese until silky and melted. Taste and adjust seasoning.

Chef's tip: Don't skip browning the chicken first—those caramelized bits are pure flavor gold and will make your sauce taste restaurant-quality.
