Salted Butterscotch Blondies

These are the brownie's sweeter, softer cousin—chewy bars loaded with butterscotch and brown sugar that somehow taste fancy despite being ridiculously easy.

Ingredients:

  • 170g all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt (plus fleur de sel for topping)
  • 115g unsalted butter, softened
  • 150g packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 170g butterscotch morsels

Method:

  1. Preheat to 175°C and grease a 20cm square baking tin.
  2. Whisk flour, baking soda, and salt in a bowl; set aside.
  3. In the same bowl, cream butter and brown sugar until light and fluffy (about 2 minutes).
  4. Beat in egg and vanilla until combined.
  5. Fold in the flour mixture until just combined, then stir in butterscotch morsels.
  6. Spread into tin and bake 20–24 minutes until golden and a toothpick comes out with a few moist crumbs.
  7. Sprinkle with fleur de sel while still warm, cool completely, then cut into squares.

Chef's tip: Don't overbake these—that toothpick pull-test is crucial. The residual heat continues cooking them as they cool, so they'll firm up to perfect chewiness while the edges stay crisp.
