Buffalo Chicken Grilled Cheese
Crispy, gooey, and unapologetically spicy—this is the grilled cheese sandwich that changes everything about your weekend lunch. It transforms leftover chicken into something bold and craveable, proof that the best meals don't need hours of fussing.
Ingredients:
- 2 cups shredded cooked chicken
- ½ cup buffalo sauce
- ¼ cup ranch dressing or blue cheese dressing
- 1 cup shredded cheddar cheese
- 8 slices bread (sourdough or white work beautifully)
- 4 tablespoons butter, softened
- Salt and pepper to taste
Method:
- Toss your shredded chicken with buffalo sauce and let it sit while you prep everything else—this builds flavor.
- Spread softened butter on one side of each bread slice.
- Heat a skillet over medium heat. Place one slice butter-side down, then layer on a handful of cheddar, a generous dollop of the buffalo chicken mixture, a drizzle of ranch, more cheese, and the second bread slice (butter-side up).
- Cook for 3–4 minutes until the bottom is golden and crispy, then carefully flip and cook the other side until equally golden and the cheese is melted through.
- Slice diagonally (it tastes better this way, trust me) and serve immediately.
Chef's tip: Don't skip the dressing inside—it cools the heat just enough to let you taste the chicken, and it adds a silky richness that makes each bite utterly craveable.
