Easy Jalapeño Corn Fritters
Golden, crispy corn fritters with a kick of jalapeño are the ultimate American snack—addictive enough to disappear before you finish cooking them, yet simple enough to pull together in minutes.
Ingredients:
- 1½ cups fresh or frozen corn
- 1 cup all-purpose flour
- ½ cup unsweetened plant-based milk
- 2 tablespoons olive oil, plus more for frying
- 2 jalapeños, finely diced
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon cumin
- ¼ teaspoon garlic powder
- Lime wedges and fresh cilantro for serving
Method:
- Whisk together flour, baking powder, salt, cumin, and garlic powder in a bowl.
- Stir in milk and 2 tablespoons olive oil until just combined—lumps are fine.
- Fold in corn and diced jalapeños gently.
- Heat ¼ inch of oil in a large skillet over medium-high heat until shimmering.
- Drop spoonfuls of batter into the hot oil and fry 2–3 minutes per side until golden and crispy.
- Drain on paper towels, then squeeze lime over them and scatter cilantro on top.
