Weeknight dinner
Chicken Smash Tacos
Ground chicken pressed crispy against the pan, then crowned with zingy lime-cabbage slaw and a silky jalapeño sauce—this is the weeknight dinner that feels like you're showing off but takes barely 20 minutes.
Ingredients:
- 1 lb ground chicken
- 8 small flour or corn tortillas
- 2 cups shredded green cabbage
- 1 lime, halved
- 1 jalapeño, sliced
- ½ cup Greek yogurt or sour cream
- 2 cloves garlic, minced
- Salt and pepper to taste
- Oil for cooking
- Fresh cilantro and diced onion (optional)
Method:
- Make the slaw: toss shredded cabbage with juice from half a lime, salt, and a pinch of pepper. Set aside.
- Blend jalapeño, garlic, Greek yogurt, lime juice, and salt into a smooth sauce.
- Heat oil in a large skillet over medium-high heat. Place a tortilla flat, spoon chicken onto it, then press hard with a spatula for 2–3 minutes until golden and crispy. Flip and cook 1 minute more. Transfer to a plate.
- Repeat with remaining tortillas and chicken.
- Pile each tortilla with cabbage slaw, drizzle with jalapeño sauce, and add cilantro and onion if using.
Chef's tip: Press down *hard* on that chicken—the caramelized, crispy bits are where all the flavor lives, and they're what make this feel restaurant-quality.
