Weeknight dinner

Chicken Smash Tacos

Ground chicken pressed crispy against the pan, then crowned with zingy lime-cabbage slaw and a silky jalapeño sauce—this is the weeknight dinner that feels like you're showing off but takes barely 20 minutes.

Ingredients:

  • 1 lb ground chicken
  • 8 small flour or corn tortillas
  • 2 cups shredded green cabbage
  • 1 lime, halved
  • 1 jalapeño, sliced
  • ½ cup Greek yogurt or sour cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Oil for cooking
  • Fresh cilantro and diced onion (optional)

Method:

  1. Make the slaw: toss shredded cabbage with juice from half a lime, salt, and a pinch of pepper. Set aside.
  2. Blend jalapeño, garlic, Greek yogurt, lime juice, and salt into a smooth sauce.
  3. Heat oil in a large skillet over medium-high heat. Place a tortilla flat, spoon chicken onto it, then press hard with a spatula for 2–3 minutes until golden and crispy. Flip and cook 1 minute more. Transfer to a plate.
  4. Repeat with remaining tortillas and chicken.
  5. Pile each tortilla with cabbage slaw, drizzle with jalapeño sauce, and add cilantro and onion if using.

Chef's tip: Press down *hard* on that chicken—the caramelized, crispy bits are where all the flavor lives, and they're what make this feel restaurant-quality.
