Passion Fruit Chia Pudding

This silky, show-stopping pudding bridges Asian and contemporary dessert worlds—creamy from tofu and sweetened condensed milk, bright with passion fruit, and ready in minutes. It's the kind of elegant finish that feels fancy but requires zero stress.

Ingredients:

  • 200g silken tofu
  • 150ml vanilla yogurt
  • 3 passion fruits, halved and pulp scooped
  • 3 tablespoons sweetened condensed milk
  • 3 tablespoons chia seeds
  • 1 tablespoon honey or agave (optional, for extra sweetness)
  • Pinch of salt

Method:

  1. Blend silken tofu, vanilla yogurt, passion fruit pulp, sweetened condensed milk, and salt until completely smooth and creamy.
  2. Gently fold in chia seeds by hand, stirring well to prevent clumping.
  3. Divide between four serving glasses or bowls.
  4. Chill for at least 10 minutes (or up to 2 hours for a thicker texture).
  5. Top with extra passion fruit pulp, toasted coconut flakes, or candied ginger if you like.
