Weekend feast
Satay Chicken Legs with Peanut Sauce
Crispy-skinned chicken drumsticks glazed with aromatic spices and served with a silky peanut sauce for dunking—this is the kind of weekend feast that feels indulgent but comes together effortlessly.
Ingredients:
- 8 chicken drumsticks
- 3 tbsp soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp ground coriander
- 1 tsp turmeric
- For the peanut sauce: 1 cup smooth peanut butter, 3 tbsp lime juice, 2 tbsp soy sauce, 1 tbsp honey, 1 tsp chili flakes, 4 tbsp warm water
- Fresh cilantro and lime wedges to serve
Method:
- Preheat your oven to 220°C (425°F). Pat the drumsticks dry and arrange on a baking tray.
- Whisk together soy sauce, honey, garlic, ginger, coriander, and turmeric. Brush generously over the drumsticks, turning to coat all sides.
- Roast for 35–40 minutes until the skin is golden and crispy, turning halfway through.
- While the chicken cooks, whisk together all peanut sauce ingredients until smooth and pourable. Taste and adjust heat or sweetness as you like.
- Serve the drumsticks hot with the peanut sauce for dunking, scattered with fresh cilantro and lime wedges.

Chef's tip: Make the peanut sauce ahead and gently warm it before serving—it tastes even better when the flavours have had time to meld, and you'll have one less thing to do when your guests arrive.
