Weekend feast
Slow Cooker Chicken Tacos
Tender, seasoned chicken that practically falls apart, ready to transform into whatever vessel you choose—these dump-and-go tacos are the ultimate weekend feast starter that requires almost no effort but delivers maximum flavor and flexibility.
Ingredients:
- 2 lb boneless, skinless chicken breasts or thighs
- 1 cup salsa (fresh or jarred, your preference)
- 1 packet taco seasoning (or 2 tablespoons homemade blend)
- 1 lime, juiced
- ½ cup chicken broth
- Corn or flour tortillas, for serving
- Toppings: cilantro, avocado, crema, pickled onions, shredded cheese
Method:
- Place chicken in your slow cooker along with salsa, taco seasoning, lime juice, and broth.
- Cook on low for 6–7 hours or high for 3–4 hours, until chicken shreds easily with a fork.
- Shred the chicken directly in the slow cooker and stir to combine with the cooking liquid.
- Warm your tortillas and pile high with chicken and your favorite toppings.
Chef's tip: Don't skip the lime juice—it brightens everything and prevents the dish from tasting flat, even with jarred salsa.
