Easy Jalapeño Corn Fritters
Crispy golden fritters that shatter between your teeth, releasing tender corn kernels and a gentle heat—this is the snack that turns a casual moment into something memorable. They're vegan, they come together in minutes, and they taste like summer captured in a bite.
Ingredients:
- 1 cup corn kernels (fresh or frozen)
- ¾ cup all-purpose flour
- ¼ cup cornstarch
- ½ cup plant-based milk
- 2 jalapeños, finely diced
- 2 cloves garlic, minced
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Oil for frying
Method:
- Mix flour, cornstarch, baking powder, salt, and pepper in a bowl.
- Whisk plant-based milk into the dry ingredients until just combined.
- Fold in corn kernels, jalapeños, and garlic.
- Heat ¼ inch of oil in a skillet over medium-high heat.
- Drop spoonfuls of batter into hot oil, flattening slightly, and fry 2–3 minutes per side until golden.
- Drain on paper towels and serve warm with lime wedges or a cool dipping sauce.
