Savory Scrambled Eggs with Soy and Ginger
Silky scrambled eggs infused with umami-rich soy sauce, fresh ginger, and a whisper of sesame oil—this is how breakfast tastes in Tokyo teahouses, and it's about to become your new favorite way to start the day.
Ingredients:
- 8 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon fresh ginger, finely minced
- 2 green onions, sliced thin
- 1 tablespoon butter
- Pinch of white pepper
- Toasted sesame seeds for garnish (optional)
Method:
- Crack eggs into a bowl and whisk together with soy sauce, sesame oil, ginger, and white pepper until well combined.
- Heat butter in a non-stick pan over medium-low heat until foaming gently.
- Pour in the egg mixture and let it sit for 10 seconds before stirring gently with a spatula, pushing curds from the edges to the center.
- Continue stirring every 20 seconds for about 3–4 minutes, until eggs are just set but still creamy.
- Fold in most of the green onions, reserving some for topping.
- Serve immediately on warm toast or rice, garnished with remaining green onions and sesame seeds.
