Grain-Free Granola

This crunchy, nutty granola is the opposite of boring—no oats needed, just pure toasted goodness that transforms breakfast from routine to something you'll actually look forward to.

Ingredients:

  • 2 cups mixed nuts (almonds, pecans, walnuts), roughly chopped
  • 1 cup coconut flakes, unsweetened
  • ¼ cup seeds (pumpkin, sunflower, or sesame)
  • ¼ cup coconut oil, melted
  • ¼ cup raw honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • ⅛ teaspoon cinnamon (optional)
  • Pinch of turmeric or cardamom for warmth

Method:

  1. Preheat your oven to 325°F and line a baking sheet with parchment paper.
  2. Whisk together the melted coconut oil, honey, vanilla, salt, and spices in a large bowl.
  3. Toss the nuts, coconut flakes, and seeds into the wet mixture until everything's evenly coated.
  4. Spread across the baking sheet in a single layer.
  5. Bake for 20–25 minutes, stirring halfway through, until golden and fragrant.
  6. Cool completely on the pan (it'll crisp up as it cools), then store in an airtight container.
