Grain-Free Granola
This crunchy, nutty granola is the opposite of boring—no oats needed, just pure toasted goodness that transforms breakfast from routine to something you'll actually look forward to.
Ingredients:
- 2 cups mixed nuts (almonds, pecans, walnuts), roughly chopped
- 1 cup coconut flakes, unsweetened
- ¼ cup seeds (pumpkin, sunflower, or sesame)
- ¼ cup coconut oil, melted
- ¼ cup raw honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
- ⅛ teaspoon cinnamon (optional)
- Pinch of turmeric or cardamom for warmth
Method:
- Preheat your oven to 325°F and line a baking sheet with parchment paper.
- Whisk together the melted coconut oil, honey, vanilla, salt, and spices in a large bowl.
- Toss the nuts, coconut flakes, and seeds into the wet mixture until everything's evenly coated.
- Spread across the baking sheet in a single layer.
- Bake for 20–25 minutes, stirring halfway through, until golden and fragrant.
- Cool completely on the pan (it'll crisp up as it cools), then store in an airtight container.
