Easy Jalapeño Corn Fritters (Vegan)

Crispy golden fritters bursting with sweet corn and a gentle kick—these are the kind of snack that disappears within minutes, whether you're serving them as an appetizer or tucking them alongside a main course.

Ingredients:

  • 1½ cups corn kernels (fresh or frozen)
  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1–2 jalapeños, finely diced
  • ¼ cup plant-based milk mixed with 1 tablespoon lemon juice
  • Oil for shallow frying

Method:

  1. Mix flour, cornstarch, baking powder, salt, and pepper in a bowl.
  2. Fold in corn and jalapeños, then add the plant milk mixture until just combined—don't overmix.
  3. Heat oil in a shallow pan over medium-high heat until shimmering.
  4. Drop spoonfuls of batter into the oil and flatten slightly; fry 2–3 minutes per side until golden and crispy.
  5. Transfer to paper towels to drain.
