Easy Jalapeño Corn Fritters (Vegan)
Crispy golden fritters bursting with sweet corn and a gentle kick—these are the kind of snack that disappears within minutes, whether you're serving them as an appetizer or tucking them alongside a main course.
Ingredients:
- 1½ cups corn kernels (fresh or frozen)
- ¾ cup all-purpose flour
- ¼ cup cornstarch
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1–2 jalapeños, finely diced
- ¼ cup plant-based milk mixed with 1 tablespoon lemon juice
- Oil for shallow frying
Method:
- Mix flour, cornstarch, baking powder, salt, and pepper in a bowl.
- Fold in corn and jalapeños, then add the plant milk mixture until just combined—don't overmix.
- Heat oil in a shallow pan over medium-high heat until shimmering.
- Drop spoonfuls of batter into the oil and flatten slightly; fry 2–3 minutes per side until golden and crispy.
- Transfer to paper towels to drain.
