Easy Jalapeño Corn Fritters

Golden, crispy corn fritters with a subtle heat are the perfect Indian-inspired snack—crunchy outside, tender within, and utterly addictive with a cup of chai or as a side to any meal.

Ingredients:

  • 1 cup fresh or frozen corn
  • 1 cup all-purpose flour
  • ½ cup plant-based milk
  • 2–3 jalapeños, finely chopped
  • ½ teaspoon turmeric
  • 1 teaspoon cumin seeds
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Oil for frying
  • Fresh cilantro, chopped (optional)

Method:

  1. Mix flour, turmeric, cumin seeds, salt, and pepper in a bowl.
  2. Stir in corn, jalapeños, and cilantro, then add milk to form a thick, drop-able batter.
  3. Heat oil in a deep pan to medium-high heat.
  4. Carefully drop spoonfuls of batter into hot oil, frying 2–3 minutes per side until golden brown and crispy.
  5. Drain on paper towels and serve warm with mint chutney or yogurt.

Chef's tip: Keep your oil at a steady temperature—too cool and they'll absorb grease; too hot and they'll brown before cooking through. Test with one fritter first to find your sweet spot.
