Pumpkin Baked Oatmeal
Warm, spiced, and deeply satisfying—pumpkin baked oatmeal feels like having pumpkin bread and hearty comfort in one golden-brown square, perfect for lazy Italian mornings or when you want breakfast to taste like autumn.
Ingredients:
- 2 cups rolled oats
- 1 cup pumpkin puree
- 1¾ cups milk
- ⅓ cup maple syrup or honey
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup chopped pecans or walnuts (optional)
Method:
- Preheat your oven to 350°F and grease an 8x8-inch baking dish.
- Whisk together pumpkin puree, milk, maple syrup, vanilla, and pumpkin pie spice in a large bowl.
- Stir in oats, baking powder, and salt until everything is well combined.
- Pour into your prepared dish, scatter nuts on top if using, and bake for 35–40 minutes until golden and set.
- Let it cool for 5 minutes, then slice into squares and serve warm.
