Bacon-Wrapped Pork Tenderloin with Delicata Squash and Caramelized Pears

This showstopping sheet-pan dinner marries Italian elegance with weekend ease—juicy pork wrapped in bacon, roasted alongside sweet squash and pears glazed in maple and whole-grain mustard for a dish that tastes like you've been cooking all day.

Ingredients:

  • 1.5 lb pork tenderloin
  • 6–8 slices bacon
  • 1 delicata squash, halved, seeded, and sliced into rings
  • 2 firm pears, halved lengthwise, cored
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • Salt and freshly ground pepper
  • Fresh thyme (optional)

Method:

  1. Preheat oven to 400°F. Pat pork dry and season generously with salt and pepper.
  2. Wrap bacon strips tightly around the pork tenderloin, securing with toothpicks if needed.
  3. Arrange squash rings and pear halves on a large sheet pan. Whisk together mustard, maple syrup, and olive oil; toss with vegetables and season.
  4. Place wrapped pork in the center of the pan. Roast 25–30 minutes until pork reaches 145°F internally.
  5. Rest for 5 minutes, then slice and serve with caramelized vegetables.

Chef's tip: Don't skip the resting step—it keeps the pork impossibly tender and lets the juices redistribute, making every bite better.
