Easy Eggplant Bolognese
This is the weeknight pasta sauce that feels like a secret—eggplant melts into the tomatoes and aromatics to create something creamy and deeply satisfying without any cream at all. It's bold, bright, and comes together in one pot.
Ingredients:
- 3 tablespoons olive oil
- 1 medium eggplant, diced into small cubes
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Pinch of red pepper flakes
- Fresh basil for garnish
- Pasta and Parmesan for serving
Method:
- Heat olive oil in a large pot over medium-high heat. Add diced eggplant and cook for 5-7 minutes, stirring occasionally, until it starts to soften and brown slightly.
- Add onion and cook for 3 minutes until fragrant. Stir in garlic and tomato paste, cooking for another minute.
- Pour in crushed tomatoes, oregano, salt, pepper, and red pepper flakes. Stir well.
- Reduce heat and simmer for 15-20 minutes, stirring occasionally, until the eggplant breaks down and the sauce thickens and deepens in flavor.
- Cook pasta separately according to package directions. Toss with sauce and top with fresh basil and Parmesan.

Chef's tip: Don't skip browning the eggplant first—those caramelized edges add richness and prevent a watery sauce.
