Zuppa Toscana

This creamy, soul-warming Tuscan soup combines Italian sausage, potatoes, and kale in one pot — it's restaurant-quality comfort that tastes like a hug from a Nonna, ready in under 30 minutes.

Ingredients:

  • 1 lb Italian sausage, casings removed
  • 4 cups chicken broth
  • 1 lb potatoes, diced small
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chopped fresh kale
  • ½ cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Method:

  1. Heat olive oil in a large pot over medium-high heat. Brown the sausage, breaking it into small pieces as it cooks (about 5 minutes), then remove and set aside.
  2. In the same pot, sauté onion until soft, then add garlic and cook for 1 minute.
  3. Add potatoes and broth, bring to a boil, then simmer for 10 minutes until potatoes soften.
  4. Stir in the kale and cooked sausage, simmering for 3–4 minutes until kale wilts.
  5. Pour in cream, season with salt, pepper, and red pepper flakes, and warm through without boiling.
  6. Taste and adjust seasoning, then serve immediately.
