Slow Cooker Chicken Tacos

These dump-and-go tacos are the ultimate weekend feast shortcut—tender, flavourful chicken that practically cooks itself while you relax, leaving you free to set the table and gather your crew around something genuinely delicious.

Ingredients:

  • 2 lb boneless, skinless chicken breasts
  • 1 cup salsa (mild or spicy, your choice)
  • 1 onion, sliced
  • 2 tsp cumin
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Corn or flour tortillas for serving
  • Toppings: shredded cheese, lettuce, cilantro, lime, avocado

Method:

  1. Place chicken breasts and sliced onion in your slow cooker.
  2. Pour salsa over the chicken and sprinkle with cumin, chilli powder, garlic powder, salt, and pepper.
  3. Cook on low for 6–8 hours or high for 3–4 hours, until chicken shreds easily with a fork.
  4. Shred the chicken directly in the slow cooker and stir to combine with the sauce.
  5. Warm tortillas and build your tacos with the chicken, then pile on fresh toppings.
