Easy Jalapeño Corn Fritters
Golden, crispy-edged corn fritters studded with fresh jalapeños—this is Mexican comfort food that tastes indulgent but comes together in minutes, making it the perfect snack, appetizer, or side dish that'll disappear fast.
Ingredients:
- 1 cup fresh or frozen corn
- 1 cup all-purpose flour
- ¼ cup cornstarch
- 2–3 jalapeños, minced
- ½ cup unsweetened plant milk
- 1 teaspoon baking powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Oil for frying
- Fresh cilantro (optional)
- Lime wedges for serving
Method:
- In a bowl, whisk together flour, cornstarch, baking powder, cumin, salt, and pepper.
- Stir in corn, jalapeños, and plant milk until just combined—lumps are fine.
- Heat ½ inch of oil in a skillet over medium-high heat until shimmering.
- Drop spoonfuls of batter into the hot oil and fry 2–3 minutes per side until deep golden.
- Drain on paper towels, scatter cilantro on top, and serve hot with lime wedges and your favorite salsa or crema.
