Easy Jalapeño Corn Fritters
Crispy on the outside, tender and juicy within—these golden corn fritters are a Mexican-inspired weeknight winner that comes together in minutes and feels like you've actually fussed.
Ingredients:
- 1 cup fresh or frozen corn
- ¾ cup all-purpose flour
- ¼ cup cornmeal
- 2 jalapeños, finely diced
- ¼ cup fresh cilantro, chopped
- 1 teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¾ cup plant-based milk (or regular milk)
- 2 tablespoons lime juice
- Oil for frying
Method:
- Combine flour, cornmeal, cumin, salt, and pepper in a bowl.
- Stir in corn, jalapeños, and cilantro.
- Whisk milk and lime juice together, then fold into the dry mixture until just combined—lumps are fine.
- Heat ¼ inch of oil in a skillet over medium-high heat.
- Drop spoonfuls of batter into the oil and flatten slightly. Fry 2–3 minutes per side until golden.
- Drain on paper towels and serve hot with lime crema or your favorite salsa.

Chef's tip: Don't overmix the batter—a few lumps mean tender, delicate fritters instead of tough, dense ones. Slightly underdone in the middle is your friend here.
