Slow Cooker Carne Guisada

This is the ultimate weekend feast: a deeply satisfying Colombian beef stew that fills your home with incredible aromas as it braises away, leaving you free to relax while magic happens in the slow cooker.

Ingredients:

  • 2 lbs beef chuck, cut into chunks
  • 4 medium potatoes, peeled and cubed
  • 1 can (14 oz) diced tomatoes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 bay leaf
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method:

  1. Add beef, potatoes, onion, and garlic to your slow cooker.
  2. Stir in tomato paste, cumin, oregano, and bay leaf until everything's coated.
  3. Pour in broth and diced tomatoes with their juice.
  4. Cook on low for 6–8 hours, or high for 3–4 hours, until beef is tender and potatoes are soft.
  5. Season with salt and pepper, garnish with cilantro, and serve with warm tortillas or rice.
