Slow Cooker Carne Guisada
This is the ultimate weekend feast: a deeply satisfying Colombian beef stew that fills your home with incredible aromas as it braises away, leaving you free to relax while magic happens in the slow cooker.
Ingredients:
- 2 lbs beef chuck, cut into chunks
- 4 medium potatoes, peeled and cubed
- 1 can (14 oz) diced tomatoes
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tsp cumin
- 1 tsp oregano
- 1 bay leaf
- 1 cup beef broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Method:
- Add beef, potatoes, onion, and garlic to your slow cooker.
- Stir in tomato paste, cumin, oregano, and bay leaf until everything's coated.
